What is Biodynamic wine ?

Biodynamic wine takes the process of organic agriculture in the vineyard, and extends that to the winemaking process.
Self Sufficiency and Terroir:
In the vineyard instead of fertilizer, all green waste – prunings, leaves, grape skins and seeds are returned to the soil through composting, and therefore retained on the farm. The advantage of this self-sufficiency is that it contributes to the grapes retaining their unique flavour of place or “Terroir”
As with organic farming all biodynamic farms do not use weed killers (herbicides), synthetic pesticides or fungicides, or any genetically modified organisms.
Since Biodynamic grapes are naturally healthy at harvest it means winemakers can make wines with a minimum of intervention and additives. The use of sulphur dioxide is minimal if used at all, instead of artificial yeasts made in a lab, natural healthy yeasts already existing in the vineyard are used in the fermentation process.
Biodynamics is better for the environment, better for wine-growers and workers, can help create a sense of local community around a vineyard, and can provide wines with a genuine sense of place, that are rich in individual character.

A pale and hazy wheat beer with pronounced herbal notes, this beer has hints of clove, citrus, and banana. Conceived as a perfect match to classic roast chicken, Wu Gang will also go nicely with spicy food. Low in alcohol but with plenty of flavour, this one is a perfect thirst-quencher on a summer’s day.
Sweeter, maltier and more full-bodied than our pale ale this I.P.A. is dry-hopped with generous amounts of U.S. hops to make a balanced and drinkable I.P.A.
Everyone likes a pale ale and we’re no different. We like to mix up the aroma hops a bit and you will find that Pale Fire comes in different versions sometimes. We have hopped with Mosaic and Amarillo, Amarillo and Citra, Nelson Sauvin and others including the legendary Hop X, an English trial-hop being developed by Dr Peter Darby at Wye Hops.
The Kernel brewery springs from the need to have more good beer. Beer deserving of a certain attention. Beer that forces you to confront and consider what you are drinking. Upfront hops, lingering bitternesses, warming alcohols, bodies of malt. Lengths and depths of flavour. They make Pale Ales, India Pale Ales and old school London Porters and Stouts,bottled alive, to give them time to grow.

Hallets Real Cider is produced by hand at Blaengawney Farm using a blend of Welsh cider apples. Once blended, it is matured, bottled and stored for a minimum of 3 months, allowing a natural conditioning to occur.
